My very first xc race was at Sunken Meadow State Park. That course had two challenging hills. Do they still race there? I ran a 19:36 literally two weeks into my racing career. That course was eye-opening.
The Hotchkiss School has a very demanding course. Cardiac Hill is infamous, but it has a 500m long incline at 2.25 that to me is the toughest part of the course.
The NMH School (Gill,MA) has a very challenging xc course with Jacob's Ladder and a lot of roller coaster type hills. Very little true flat.
