Presumably they would have mentioned it if the food truck added kidneys into their stomach offal, so their story because a bit less believable. In the end, the too large nandro amount didn't matter, because the case was already lost when the postulated uncastrated boar as source was ruled to be "possible but improbable".

As for what was exactly tested for, they chose not to say. Ask Houlihan. The lab itself has an only brief overview of their capacities online.
They did not analyse the burritos in question.
What strikes me is the effort and money put in as soon as the test result came in. I would see it a unusual to do this if they knew where it had come from.
My point about the stomach was more about dealing with the stupidity of Armstronglivs about the experts being honest.
