These aren't doorbell cameras. Cities like NYC and London have police cameras all over the place for things like this. They track license plates every few blocks with cameras on lampposts and can use that data for other purposes like this.
Relating to the bus - my guess is he used the same fake ID to buy the bus ticket that he used to check into the hostel and they tracked it that way, but I haven't heard that definitively.

But in my neighborhood in Baltimore the cameras are one person's ring doorbell, another's wyze garage cam etc. They aren't all linked to law enforcement. Are there actual law enforcement cameras all over NYC? Then why in the hell are there so many unsolved crimes?
Because paying a cop $70/hr (total cost including pension and overtime, actual salary is $40-$50) to spend three days walking through your neighborhood to solve the issue of the $8 stolen shampoo from CVS doesn't make any business sense, especially when government funding has been reduced to fund tax cuts.

That's exactly why it's NOT organized crime. A hit man would not have brought the phone.
The whole thing could have done without ever possessing a cell phone or other trackable device in NYC
Organized crime would have given him an unidentifiable safe house until the day of the deed, and an unidentifiable getaway car to who knows where shortly after.
Private Alarm, Utilities, Cell Companies, Visa, MC. etc give open access to police without a court order. Its a company policy of many corporatiions. They don't have to allow it but many do.
The CIA knows exactly which elite family ordered the hit, who was carrying it out and how. They've also staged the forthcoming "apprehension" of "the suspect", and coming forward with all these details is part of that plot. A 3rd party that did not shoot the man is going to be scapegoated for the plot and the CIA will assist in filling in all the pertinent details accordingly ahead of staging his imprisonment (and perhaps death penalty).
They said he took a bus that originated from Atlanta. They didn't say he got on the bus in Atlanta. He could have got on the bus from many different points between Atlanta and NYC.

It’s a burner phone so it probably doesn’t have any personal information on it.
