No need to stick a 12 month window on it.
How much running have you done previously? If you can run sub 2, you will run sub 2. You have plenty of time to reach that goal. And why even stop there? Aim for sub 1.55.
You'll need a lot threshold work though, and if you try and push things too much, you'll just end up injuring yourself.
If you have consistently tight hamstrings ... obviously you should add a serious program of hamstring flexibility AND STRENGTH to your training. Leg curls alone aren't enough for the strength as you need to strengthen the hamstrings in leg-extended position to match the stresses of fast running (hamstring is contracting while extending). Nordic leg curls, hip extensions, etc.

Yes. I went from 2:03 to 1:51 in about 18 months. It's largely dependent on how much effort it took to get to 2:12. If you weren't training very hard then several consistent months of training should get you close if not under 2:00
My first ever 800m was while I was a junior in high school. I ran 1:58. I had talent and ran shorter stuff the year before. I think either you have the talent or not. A 2:12 PR says to me that you don't have the talent to break 2 minutes. While not impossible, it's close.
