If dangerous activities like hang gliding were normally allowed, why are races currently banned?

Don’t be obtuse. The current restrictions are not about protecting you from the virus, they are about slowing the viruses transmission. They are about protecting other vulnerable people from you, not about protecting you from yourself.

I can waive away my rights when I go skydiving, so I should be able to do the same for a track meet.

Based on that logic, you wouldn't be allowed to do anything that wasn't absolutely necessary for survival.
