What's wrong with their apostrophe placement? A woman named Ruth purchased a restaurant called "Chris Steakhouse". It stands to reason that it would then be called Ruth's Chris Steakhouse.
Nothing wrong with the apostrophe grammatically, but unless you know the backstory (and how many people do, really?) it just looks awkward.
Is it Ruth's Steakhouse? No
Is it Chris's Steakhouse? No
Is it "Ruth Chris's" Steakhouse?" No
It's Ruth's Chris Steakhouse
Good thing Chris didn't buy Ruth Steakhouse. Then we'd be stuck with Chris's Ruth Steakhouse.
