all my reps were completed at even paced 2:45 - 2:40, and I felt pretty good until the last couple reps.

It means that you could do a double of the 800 and 4 x 800 in the same meet with only 4 minutes rest between them and expect to run around a 2:40.

Yeah, with rest periods that long, it looks like you're just practicing 800s.

He asked what it would accomplish, not what it might predict.
This type of workout helps increase your Max VO2 (assuming the 2:40 pace was correct) but the rest interval is a little too long. You coach may have you jogging a full lap between intervals which may be too long of a rest interval
If you are running them at about your current mile race pace, they are good for speed and economy -- but you aren't taking enough rest for that. If you are running them near your current 3200 race pace they are good for oxygen transport uptake/aerobic capacity, but then you are taking more rest than ideal, I think. (Aim for equal time recovery.) And if you are running them slower than 5K pace, you are taking way too much rest, and they aren't good for much of anything. With 60-90 seconds rest, that would help your stamina.

It’s better than a slow 5-6 mile run. Not every workout needs to be a perfect Vo2Max stimulus.
