Alright, so today I did a 5x250 workout with 3 minutes rest between each rep. My splits were 42, 39, 39, 40, 40. Mile is currently 30 mpw (im building back up to 55) Using this information, what would my 800 race time be if I were to go run one?

I dont think there is enough info here for me to make a prediction. With the 800 you need to know your endurance + speed endurance to accurately predict.
I'm going to guess 2:05.
I'm assuming if you raced a 250 you'd do it in 36 seconds. Then I used this formula: 36*(800/250)^1.07 = 2:05
Pretty much a guess though. I don't know what you could actually race 250 in. Also, that formula generally applies for longer distances, I'm not sure it applies to 250m. Also, sometimes I use 1.06 instead of 1.07.
