How would you suggest offseason training for someone trying 800 and 1600?

During this XC season, I have averaged 25 mpw, and have a 17:41 best.
I'm definitely a speed based guy. During my 5k yesterday, I completed the last .1 in 23 seconds. And passed around 20 people.
I kicked my way to a 4:32 to (barely) move on to state, slow race, windy and hot.
