6'30 pace marathon, what is "easy" pace?
I'm a mid 2:40s marathoner, I do my easy runs between 8-10 minute mile pace.

Is this your goal pace? ... or have you already run a 2:50.x marathon?
If 2:50.x is your current marathon best, and you' re fitness indicators (HM, 10K) align with equivalent performance, then your "E" pace should fall somewhere around 8:10 (+/- 60s) / Mile pace.
If 2:50.x is your goal pace, you'll want to start with your current fitness level (based on most recent indicators) and build up to a training equivalent (established with successful benchmarks, like training tests or race performances)... since I don't know what your current fitness level is, I can't accurately answer the question.

Hey, curious, how many miles/week? And what percentage of your weekly miles are at 8-10 pace?
I'm just above 2:50 now and plan to increase my mileage (from about 65/week) to get into the 2:40s...most of my easy miles are at 7:45 to 8....I know I'll need to slow down.

Mileage varies, I usually do between 60-80 miles per week. Though in the peak of training I get up to 100+ miles a week. What percentage of my training is done at a 8-10 minute mile pace? About 80-90%(don't keep track of exact percentages). I usually do one medium to long run(usually 10-18 miles) per week at about marathon pace. And, one or two other workouts per week totalling about 4-6 miles each, at faster than marathon pace(usually 10k pace).

"Easy" is not a pace. It is a feeling. Run easily without becoming harried. It could be 7 min miles one day and 10 min miles the other.
It's a pace that is easy for you to run. Using any predetermined pace for a recovery run is stupid. According to my VDot my recovery runs should be a 6:54 pace, I do them at about 8:30-9:00 minute pace. If I did all my runs at sub 7 I would certainly get injured. For easy runs you can run as slow as you like as long as it isn't impeding your form.
Do not use your watch and run by feel !
