Your workouts show you have great speed and good endurance in comparison, but still better speed. The problem for predictor workouts for you then, is that given enough rest, you can rely on your speed, not endurance, which doesn't show how you'd fair in a 5k. for the 3x1600 to be accurate for page gauging, you need abouut 2 min jog (as the other poster said) and the ability to do a 4th at the same pace. I'm guessing on a good day you PR by 15+ sec, okay day you equal your PR or PR a bit, bad day is barely sub 16.
