That’s what Mo Farah runs and he can run 3:28 for 1500 and has closed 5k and 10k races in 50 seconds.
Sand dunes: most people on here wouldn't call my running training as I've just gotten serious about mid distance in the past year and a bit; but generally my volumes been 10-17 miles a week with mostly easy running and some strides/1 speed development workout every 10-16 days. Was just wondering what a person could in theory run for 800 off 12.5-12.7 second 100m speed

Speed: that's a good example lol, but I have a feeling on that race he wasn't in shape and wasn't going all out; plus he's a distance runner and a 100m with its importance regarding acceleration doesn't show his true speed in my opinion. But good example still lol
Running 800 m is more than just the combination of speed and endurance. There is a specific range inbetween which depends on power, lactic acid tolerance, middle distance specific running form and so on.
So with a 12.5/100 you can run sub 2 or fail to break 3 min for 800 m, and it is not just a matter of good or bad endurance.
With your very low level of training though, I would say you won't run faster than 2:30.

Sub 2 off 12.6 seems almost unlikely to me however but I don't have much experience so I can't make an informed judgment as you seem to have. I have broken 2:30 however lol
