The cookie has a very bitter taste. When you put a whole cookie in your mouth the only thing your taste buds are exposed to is the bitter cookie.
Crush them and the taste buds get a dose of the sweet filling at the same time and that cuts down the bitterness.

when you crush them , there is less mass , more air space. same with chocolate bars with bubbles in them, taste better than solid chocolate , the exception is Swiss chocolate and graham waffers.
