What do you do for a pre race shakeout on the morning of an evening race, either an 800m or 1500m,
I plan on doing 10 minutes easy + 2 x 100m strides about 6 hours before the start of the race

It is better to wait until after you race to flog the dolphin. If you do it before a race you will be way too relaxed. You want to run angry.
Just do what your body is used to doing except less
If you do plyos or any strength training regularly then there's some value in activating early in the day with this. Something short. 10 box jumps, 10" isometric split squats, 30" jump rope, 30 meter hill bounds.. etc. Don't do it as a "workout" and build fatigue, you just want to activate and wake things up. If you never do those things then don't start the day of your race though. I also try to not have caffeine that morning and save it for 1-2 hours before the race. Hydrate well throughout the day too.
What would you think about one or two easy strides after a short jog ?
That works too. You'll also do a good warm-up for your races I presume. When I race (track) during a typical training week (not tapering or resting much) then I find the morning activation session effective in helping to keep things fired and loose.

10 minutes easy then 3-4 strides. Then 2-3 minutes easy.
