Got a pair of Pegasus for $65... thinking of adding another. Absent the up-front cost, is there any reason not to do this? I'll probably need new trainers every month or two, and I imagine shoes don't have a sell-by date to any high degree... right?

There isn't really any downsides if you like the model of trainers you're buying
I wouldn't stockpile more than about a year's worth unless it's an even better deal, like $40. There are deals all the time. If you're over 30, your feet might get bigger (10 to 11.5 for me from about 30 to 40), and your tastes might change.
I usually have 2-3 pairs of shoes ready to go. Nothing wrong with nabbing a few while they are on special, especially when it's a brand/model that works well for you.
A suggestion: after wearing the current pair for a month or so, start breaking in and using the next pair. This way, you will notice the difference in cushioning and support between the two pairs, and can judge when to replace the older pair.
