Does it make sense to run at 7pm and wake up at 4am the following day for the next run if that's what your schedule allows?

I mean yes but only if you can function off of that much sleep. Remember recovery is just as important as running.
If that is the only way you can get mileage in, that should be good. You just don't want your evening run to be hard and morning hard, one needs to be shorter and easier, IMO. When I double, it is about 6hrs after a hard or longer effort, and it is an easy 35-45 min run. Here is a good discussion about singles and doubles. Everyone is different and you have to find what works for you.

I run at 4am and again at 1pm during my lunch break. I could not fathom trying to run late at night and having to do it again that early in the morning.

I've done this. Make sure your evening run, especially during the work week, is easy. Running hard later will likely cause more restless sleep, and 8 hours is needed more than ever when bumping the mileage and effort.
