Any thoughts? Would one day off per week make up for only 6-7 hours of sleep per night?

you're not a battery, you can't store rest
Not everyone needs the same amount of rest. 6-7 hours may be perfect for you.
It also is not a matter of saying that more work = more need for rest.
When I'm running a lot and training well, I find that I need less sleep.
Generally speaking I get 8 hours each night, but when I'm running either hard or long and at or near top fitness, I need less - about 7. If I try to stick to the 8 when I'm in decent shape, I can't sleep. Perhaps my body is more efficient when in shape? I really don't know the answer - pleading ignorance here.

In your dreams!
The body doesn't wait for 7 days to repair itself. The easiest person to fool is yourself. If you are in college, I doubt that you are so busy that you can't find time to sleep. The sleep doesn't need to occur all at once, try a nap (not in class).

Then next time, don't post.
I think that looking at the BYU team is a good way to answer this question. They have Sundays forced off for religious reasons. The women totally kick ass. The men are average at best. So, I would say, works for women, not for men.
Focus,
What a nice person you are.
what's preventing you from getting more than 6-7 hours? i imagine the must be some way to rearrange you schedule to allow for at least another hour of sleep.
