I've been racing for 4 years and have only raced in lightweight trainers that weigh 11 ounces. If I switch to 8 ounce flats, how much faster can I run for 5K, assuming everything else remains constant?

I've heard the difference is a second per once per mile, so that would be 9 seconds in your case. Not sure how accurate that is though.
three ounces is worth slightly less than one second per lap in my experience, around 10 - 12 seconds in a 5k I would say.
