how much do these yahoo pacers get paid to do this? Do the pacers who pace for longer get more money? Are they penalized for being off pace? If so, what is the structure for the pay penalty. I've always been curious

"Rabbits's" is correct but inelegant. "Rabbits'" is also correct. Unless one rabbit is pacing every heat, "rabbit's" in incorrect.
