Well I'm aiming for around 2:25-2:27, what would be a workout that would help me get to/predict a time like that?

Hard to say, but that is a very light workout, many teams will stride 5x200s at that effort following a workout. So, probably not, but that's not to say you won't hit your goal. With 35/36 being really hard, you might have a tough time hitting 1:10 for a 400, twice in a row being harder. However, you might more likely be able to his 1:17, thus 2:34 range if you keep it even--again, I could be very wrong, shit happens during races and sometimes the bomb drops and you might crack 2:20.
Try a set of 400 repeats--if you can consistently hit well below your 800 split with minimal rest, you should have a good indicator.
Thanks for the insight! My pb is 2:30. Ran that very recently. 400 repeats are probably better; you're definitely right there. I looked it up and came across 3-4x400 at 800 pace with 3-4 minutes rest, is that what you mean? Sounds brutal! I also read to do a 600 time trial and that if I got below 1:45 I would be ready for my goal time.
4 x 400m @ 100% (running a season best PR on #1) with 60 seconds rest is a better workout. ;-) An athlete might only run a workout like this 2x per season (beginning/end) and note the difference in the time drop, with the goal being that rep #1 being faster, and the inevitable time drop between 1 and 4 being less. Probably too brutal for you at this point, but it's something to keep in mind. 5 x 200 is probably too few reps and too short of a distance to be a good indicator. For instance sprinter types would tend to do very well for 5 x 200 and probably wouldn't be able to run the average of 5 x 200m in an 800m race. 5 x 3 with 30 sec recovery might be a better indicator. I like your idea of 1 x 600m time trial. ... another tough one would be 1 x 600m followed by 1 x 200m with 30 seconds rest. That would really help you deal with the "bear" that jumps on your back in the last 150 - 200m of an 800. Keep working, you will get there.

Yes. You're fine. That's less than 1:1 time ratio for rest and longer than the race distance. You'll get it if you have a good race.
