The 'Crazy Coach' as you label him has had his athletes win many many major marathons in recent years so I think he is doing OK. His style is different to Brother Colm but I don't see why that is a bad thing? Brother Colm has not coached Marathon runners which is where this Crazy Coach's most success has come so you are comparing apples with oranges anyway.
He is screaming at them because at the start of the workout they ignored his instructions which was to run a moderate recovery pace not jogging. Later on he is screaming at farmers for not respecting the athletes.
Why does it 'seem unstructured'? Clearly a pre -defined fartlek workout.
Despite what flashes on the screen at the beginning, the recovery is NOT at 5:15 pace. Just under 3 minutes into the video, you can hear the coach saying, "recovery should be at 3:30, maybe 3:35."
That's about 5:38-5:45 per mile.

I have PRs about one minute per mile slower than these guys: 16:xx, 33:xx. And doing that workout at 5:15 on / 6:15 off would be carnage for me! Impressive!
