I'm striving for a sub 3:00 marathon and run a 19 minute 5k, but it says I can run a 2:49:00 marathon and a 17:30 5k.

Don't use it, it's garbage
You may not have your true max HR set. If the set max HR is higher than your true max HR you will see inflated VO2 numbers and race predictions. Also if you are running in the cold and using a max HR from the summer, you will get wrong values- likely you cannot reach the same max HR in the cold as in the heat.
