I don't quite know everything about flats but here are some suggestions I put into practice:
1. Take it slow and easy. Your shoes are an important part of your training. You aren't likely to go from 50mpw to 100mpw unless you've run 100 previously. You likewise should probably not go overboard for any one pair of shoes if you haven't previously worn them.
2. Because you want to gradually introduce these shoes you'll want to introduce them in small amounts. Make it only easy runs and probably only shorter runs until you are confortable with them. If you're running 8+ every run you might want to make a few double days and wear these for a 5 miler. Don't introduce these in any workout. This also means don't force the transition by running in them on consecutive days early on, no matter how you feel.
3. If you train in multiple pair of shoes then adding a new pair won't be such a shock but if you only train in one pair then you should give yourself several weeks to make the full transition. Actually I'd suggest taking several weeks in any case but if you only have 1 pair of shoes you'll have the urge to chunk them for a new pair. Don't do this unless you and your doctor haven't spoken in a while a need to play catch up.
Some other thoughts of mine (not entirely orginal):
4. It makes no sense to race in shoes in which you do not train.
5. It makes no sense to restrict your training to as few shoes as possible. This only makes the switch harder when picking a new pair of shoes. I understand that some people have specific needs that limit their shoe choices but most people can still find several shoes to fit their needs. Obviously if you run in a different pair of shoes everyday already it is easy to put a new pair in the mix.
And wear low profile shoes for daily use. When I started the transition, I realized that none of the shoes that I spend most of the day in were low profile.
Actually I wear my old trainers most days but I suppose your suggestion is better.
