I can see it not being a good experience if you don't use it with the Surface Pro, or have to use a mouse. So it makes sense that many companies are not deploying it on desktop systems.

Windows 8.1 is actually very good. It really shines on touch devices. It works just as well on non-touch devices like desktops. You see less uptake because IT depts are slow and cheap and don't want to shell out the $$ for another version of Windows when they just finished deploying Win7.
Win8 packs some serious under the hood improvements. For example, it absolutely sails on SSDs. Loads in 5 seconds from cold boot to desktop whereas Windows 7 would boot in 10 seconds (all else being equal). Driver support on Windows 8 is unparalleled. It will work on almost any combo of hardware right out of the box.
Also, the metro interface is here to stay. If you've used a tablet or Windows Phone 8 device, you know how good the tile interface is. Fresh, fast, modern. Eventually Windows will get to a point where it can run natively on any device whether it be a phone, desktop, tablet, laptop etc. People are going to love it. A clean, consistent interface on all of their devices and all data/software/settings will be sync'd in real time.
