Usually 400 in fast races but I've seen them go as far as 600.

They do what they're contracted to do. Not too many people can go 600 at Rudisha's WR pace.

It depends on what the plans are for each race. In the uberfast WR attempts we might see one pony pull thru the 400m and as he steps off the next in line hauls the line around the turn and down the straight to 600m. I have the feeling I saw a 3 bunny race with a third Kenyan taking his countryman to 720m and moving out to let the curb hugging runner through but can not pin down which race.
each race gets it's own set of plans but typically we see those plans with target times at 400m,500m and/or 600m.

OP didn't specify 'races that Rudisha runs in' or even WR level races. He just said "800 meter races." MOST 800 meter races DON'T have people of Rudisha's caliber.
Better be more than 400. When I would rabbit my JC team's 600m time trials at practice, I would always go 400. No more, no less, though I did once think about finishing but then I remembered how hard the bear jumps on your back the last 200.
