2 minute rest is a lot.
I'll tell you what you want to hear and say 5:08.
My 1600 PR before a 15x400 workout (75 sec rest) was 5:08. I averaged 74.5. I later PR'd at 4:57.
Little interval workouts don't always assess 1600 racing ability. If you went out and did a tempo at 6 pace for 4 miles, I'd say you definitely could break 5.
