If Luke is relying on the force and no longer has Yoda guiding his training, this strikes me as similar to Hall having god guide his training. Maybe Luke needs to move up to the marathon. If he does, could they do this on a track?
Luke's a jedi and can jump like 30 feet in the air straight up. He would run an 800m in about 30 seconds.
by setting c=1 one finds that parsecs have the same units as time. quite whining about this issue. it's not an issue. The issue is that in these units 12 parsecs is ~39 years. If we assume he accelerates, in his own frame, at a constant g=10m/s^2 throughout the trip (or, accelerates halfway there and then decelerates the second half) then Han wouldn't have aged more than a couple of years (~6 or 7), while in the frame stationary with respect to the start of the kessel run it would have taken him ~40 years.
I hope this issue is now cleared up once and for all.
Although the deserts of Tatooine seem far from an ideal training ground, we could assume that the altitude of the Jundland Wastes would create a sort of "Mos Eisley Rift Valley" that has the potential for producing some of the best runners in the galaxy.
Also the Tatooine scenes were shot in Tunisia, a country whose national records are 3:31 for the 1500 and 3:50 for the mile, as well as 1:45.78 for 800. So we know that the environment is suited for middle distance runners.
However, Tatooine is home to the Mos Espa Classic podrace, whose equivalent in our culture would be NASCAR. The only place where NASCAR is prevalent is in the south, and they are god awful at running down there.
Han is a bit of a wild card, Corellia is an inner-rim (1st world) planet and he probably lives a decadent and privileged lifestyle in comparison to the backwater outer-rim (3rd world) territories such as Tatooine.
However, due to the fact that he spends a significant amount of time traveling faster than light aboard the Millennium Falcon, it is not unreasonable to suspect that he is actually much younger than he appears to be. He could also take advantage of relativity and the fact that time would pass more slowly for him at these speeds. If he had a treadmill installed, he could accrue vast amounts of training and recovery in the time that Luke would only get in one Tatooine day. Plus he has Chewie as a training partner whereas Luke only has his dreams of the academy to distract him.
In a nutshell, the smart bet is Luke, but don't be surprised if Han has utilized his spacefaring lifestyle to his advantage.

He was flying the Millenium Falcon, not driving a car you moron. It has a hyperdrive.
People bring up Han's decadent lifestyle. That's ridiculous. The most dominating runner ever was Henry Rono and he drank like a pig just like Han. It's true that longevity isn't that great with such a lifestyle, but Han is definitely not over the top yet.
What's the prize money? Han works for the money, and clearly smuggles anything for the money. Luke is not motivated by the money. What about Tusken raiders providing issues in the crowd? If Darth Vader were there all of the Tusken would be dead.

Relativity doesn't quite work that way, in that time passes at a constant rate for all observors so Han Solo is definitely as old as he looks. Also, the Millennium Falcon travels through the use of a hyperdrive, in which the ship enters a hyperspace that reaches across real-space by a factor of many thousands of miles for every mile in real-space. So when it reaches FTL (faster than light) speeds, what's really happening is that it's going its normal crusing speed, but in hyperspace. Therefore, the laws of special relativity do not have a noticeable impact, as they would if the Millennium Falcon were ACTUALLY approaching the speed of light.

Little-known fact: the original version had Vader cutting off Luke's package, not his hand, but it had to be changed to avoid an 'R' rating. Lucas said it was supposed to be a sort of reverse-Oedipus Complex thing, but he had to tone it down. Given what he did with Han shooting first it doesn't seem like the original cut will ever see the light of day.
Han MF Solo because he can run on pure hate.
