My 800PR is 2:05, except my 1600meter PR is 5:09. How can I improve my specific endurance????

Make your 1600 time closer to your 800? Next time you race a 1600, stop after two laps.
I have the exact opposite problem as you... Mile pr is 4:35 and my 800 is 2:08. I haven't really ran one in a race on its own this year, the 2:08 was HT in a 4x8 but nevertheless. Try doing more aerobic workouts and get your base fitness up, cause thats a pretty drastic drop throughout the course of a mile.
If you run a 2:05 and can't go sub-5, chances are you're gonna be more of a 4/8 guy.
Stick with the 800.
What 1600 does a 3:40 1200 convert to?
I wouldn't worry about it too much. Everyone I know has a 1600 meter time that isn't that close to their 800 time - it often takes people twice as long or even longer to run 1600 versus 800.
I've heard that if you run four laps on a 200m track instead, you can run almost half your normal 1600 PR. OP should look into that.
if you want the two times to be closer you have two choices. first is to run the 1600 faster. but since that will obviously not work for such a weakling as you then the second choice is to just run the 800 slower. the times will be closer then.

3:40 is 3 73.3 laps, assuming you can hold it a 4:53 mile. That is if you can hold it
It equated to 4:58-5:03 normally
