I've been training in the Mizuno Ronins for a few years but on the last two versions, the heel collar has been too high and stiff, which has irritated my achilles. Can anyone suggest an alternative yet similar shoe that has a lower heel collar?

The new Asics Cumulus has a low heel collar. It isn't as soft as previous models either. It would definitely be good for tempos, maybe track work, depending on how light you like your shoes for speedwork.
I've gone from Ronins to the Skechers GoRun. The cut away heel feels funky for about the first 5 minutes of running and then they feel great. Low heel collar, good cushioning, totally flexible and great feeling upper.
Take a pair of heavy duty scissors and cut away the part of the heel collar that is too high and stiff.
