I don't know if they really do that during a match, but generally speaking, my experience has been that they are able to. I know several men's league ruggers (i.e. amateurs) who--on rugby training alone--have turned in splits of less that 7 min in 5k and 5 milers without much problem.
Doesn't answer the question, I know, but there's some anecdotal feedback for you.
I was watching what you were watching and that was the Sevens World Championships. Sevens is rugby sans the pack players so there is more running than full squad rugby. Having played some Sevens myself, i can tell you that you are running most of the time with ALOT of sprinting. 2 miles seems reasonable.

I'm not sure about that. I watched some sevens last year and there are a alot of times when the players are barely moving or not moving at all. But since not one of the sevens matches I watched ended when the time ran out, who knows how long they really played.
