I finished a 5x1000m workout, 1 minute recovery in between each rep. Times were: 3:00, 3:25, 3:37, 3:44, 3:47. Feeling about a 7/10, back was hurting. What do you think I could run in the 800/1600?

3:00 and 3:47 are like lights years apart pace wise.
You averaged 3:30's so I would say 5:10, 2:19.
The combination of pace and rest determine the type of workout. 5X1000 @ 1 min rest would normally be (for an endurance-trained runner) 5000 race pace. 5000 @ 2-2:30 min rest would be ~3000 race pace.
You, as a 400/800 athlete, would normally be more challenged at longer distance paces.
Try the workout again with 2:30 rest at 5-6 seconds per lap slower than 1600 race pace.
The fact you ran too fast for the rest period only trains you to go out too fast and die. It does not tell what pace you can MAINTAIN in the workout you ran.

Since you totally botched the whole purpose of doing cruise intervals...which is what 5x1000m w/ 1' rec is...
I would say just go race a mile, or 800, or whatever your race is...

A 3:30 avg pace should yield approx. high 4:40ish...but you didn't even come close...
Find a better coach and then listen to them...
well just your first k alone was at 4:48 pace. unless this is a joke, which I think it is, you might just run 4:40 something.
