have your students follow the exploits of German Fernandez, he is a young runner they can identify with and he is currently on a good tear of races and will be running at the World Cross Championships in Amman later this month... Also have them reference Tony Sandoval, who was one of the top American Marathoners in the Early 1980's, who one of many athletes greatly effected by Carters boycott of the 1980 Moscow Olympics...

Jorge Torres is the first name that came to mind when I read the OP. The fact that he has a twin, Ed, who is nearly as good and has actually made the team for World Cross Country with him makes for a good tale for your students.
Don't forget there's Dr TS, and another TS the Cal coach who are both greats.

If most of your students are Mexican Americans, then they are not minorities.
To truly inspire them, you should consider introducing them to the backgrounds of Top Runners, regardless of their place of birth, socio-econimic status or geneological origin.
i can't believe no one's mentioned Billy Mills... and he now travels around the country talking about tolerance.
