A good staple is 6-7 x 400m at goal race pace or 1-2 sec. faster, with 1:00 rest. I always found this workout to be harder than it looks on paper, and moreover very helpful. I ran 4:05.
Although I was a 5k/10k guy, so for me the 1500 was more about developing speed. But it was also a key workout for mid-distance guys who ran around 4:00.
800/1500 guys would also do, on different weeks, 10 x 200 at 800m goal pace with 1:00 rest. Whereas I'd do 8 x 1k at 5k goal pace with 2:00 rest.
The key is to run at race pace with the shortest rest possible. 10-15 snappy 150s around 400m pace later in the week are also good.
