Is there any formula for converting elliptical "mileage" into running mileage, i.e. the "3 miles biking is approximately the same effort as 1 mile running" rule? I know darn well I didn't really do 3 miles in 15 minutes.

How about the most obvious - time at a given effort. I consider time on the elliptical as equivalent to time running if my HR is the same. Usually, I can't keep my HR was low on the elliptical and feel biomechanically fluid as I can running.
running =/= elliptical
there is no conversion factor...sorry
12,000 strides = 8 miles
aerobicly speaking you can use a 1:1 ratio. if your heart rate average while running for 10 miles at 7 minute pace is 140 and you go for 70 minutes on the eliptical with an average of 140 bpm then you can assume you got the aerobic benefit of running 10 miles at 7 min pace.
