Your basically stealing

The delivery person would have had to cover the shortage out of his own cash - its not going to come out of the shop's funds. When he goes back to the shop, the manager isn't going to say oh don't worry about it - op is a good customer. He is going to assume the delivery guy is an idiot and can't count, or worse is stealing. Neither are great and the delivery guy probably doesn't carry around loose change - because it's 2026!

You made a mistake.

Upon realizing the mistake, you should have asked the delivery person if they would please return the pizza to the pizza shop while you retrieved the correct amount to pay for the pizza you ordered - go to ATM, friend to lend you the money, whatever.

Drive over, pay the correct amount (with gratuity possibly), and get your pizza.

You had the chance to correct your mistake and you just basically cheated the shop and delivery person out of the money they count on for their livelihood.

There are things you could do now, but I don't have confidence that you would have the character to do them.

I ordered a large cheese pizza on Uber Eats the other week and it came out to $57 after taxes (and before tips). The prices are getting ridiculous. I will say this particular pizza shop is very good.

I would have asked the delivery guy if he wanted a slice or two if he was willing to cover the shortfall. If he wasn't hungry, I'd try and pay with one of the many garden gnomes I have in my front garden, or a fat koi carp from the neighbour's pond.
