I’ve been running totally even splits for my runs but is that the best way to do it? Should I run the 1 and last mile slow as a warmup and cooldown? Or does that only matter for “workouts”

that is an excellent question.
I warm up different for different types of workouts..
but generally I like to just gradually build into steady state/temp runs = so that the pace starts easy ends fast and then a slow mile or two at the end.
for intervals (track workouts) I like to stop and stretch after some jogging
but even when I do start the intervals I often use the first 2-4 as purely warmup. So I am not pushing the pace/worrying about the time. I am just seeing what my body will give me as I ease into the workout. Some days I am slowish; other days faster.
