Hardly anyone would do it. The average runner isn't running anywhere close to 20 miles. Marathoners/Ultra Marathoners aren't going to pay for a 20 mile race.
Op, there's nothing stopping you from organizing one. Personally if I was to organize a turkey trot, it would be between a 4 and 5 miler. A fun interesting distance that isn't raced too often.
A 5k marathon is more than plenty.
Thanksgiving is about spending time with family. It's not a world major.
Turkey trots are filler for a holiday about boredom and anxiety. You sit around and eat, then pretend to be thankful for something, often in the company of people you can't stand to be around. Doing a short race in weather that's usually too cold adds to the stupidity.
People do it because they think they have to. The government said so. Just about nobody enjoys any of it.

Not to mention the turkey aspect of the holiday. Turkey is such a boring meat. Hardly anyone not under duress would order a turkey dish at a restaurant because just about anything else seems more exciting.

Atlanta used to have a Thanksgiving Day marathon and half marathon. I did the half a couple of times. It was great. Amazing weather both times. Was done quick enough to make it back to my home town in plenty of time for feasting and expended about 1300 kcals during the race---about half of what I eventually probably ate!
The college kids cant run that far, how are they supposed to beat a 50 year old in a Cotten singlet, 2” shorts and racing flats??
