Chilean sea bass is one of the most over fished species out there. It is popular because like Tilapia it is a fish that doesn't taste like fish. They are slow growers and take about 10-14 years to reach maturity. As a slow grower, their populations are very sensitive to over fishing. Also, they tend to have very high levels of mercury.
If cooked well, a lot of fish that are considered "by catch" are actually delicious, sustainable and very healthy. Mackerel, red mullet, dorade, trout, and the flat fish (fluke, flounder, halibut) are all great as long as they are wild caught and not farmed.

I saw one at my local aquarium. So maybe try there, cheaper to get in than it is to pay for fish at whole foods.
