What’s the difference between fartlek and stride. I’ve heard some folks say do a 15 min jog, then a fartlek-run 30 sec, then jog 30 x 10. Then I’ve heard others like Jay Johnson say do 5 x 30 sec strides after your jog. What’s the difference?

generally strides are around mile effort. Could be me but I'm not doing mile effort stuff for a fartlek workout
strides is usually shorter than 30sec. like 15/20sec.
Fartlek can be any kind of off track interval training, often with different paces and different lenghs in the same workout. 30/30 is only one example, it's a light VO2max workout.
Strides can be done in different ways either to work on form, on speed with more rest or VO2max with less rest
You are aiming to build turnover and mechanics with strides, these are typically 50 to 200m at 400m to mile effort and you take good rest and it shouldn’t be a heavy exertion.
Fartleks vary from training ideology to training ideology, but they are primarily for aerobic development and should be a decent chunk of time of continuous running at various speeds.
