You should be in the middle of your long run right now, not moaning about work.
Personally as a underpaid employee I just do the bear minimum at work so Monday morning isn't much of a issue for me. It's just watching the clock tick away till quiting time.
It's called the sunday scaries.
Generally get a run in, get browned out by mid afternoon, then sober up enough to get some stuff done and restart the M-F cycle.
Repeat for 40 yrs until you have enough in the 401k to not die in poverty.

The only solution is to get a job you don’t dread going to. Even if the pay is good, is it worth it if you’re miserable?

This is the worst symptom of working in a job you dislike. Begin thinking about what you’d prefer to be doing. You don’t have to love going to work. Shoot for a job you hate a little less.
In the meantime, start a regular Sunday evening activity you enjoy. Even if it’s something stupid like walking to get ice cream after dinner. You’ll find it at least pushes your work blues back until you’re trying to fall asleep at night.
This is a symptom of working a job that you don't like. I like my job so I don't dread going into work. I do dread doing all my chores and errands I put off until Sunday though.
Quit your job if you don't like going to work.

I work on the weekends and have been for many years. It's nice having days off during the week. I can go places and do things without the crowds of people.
I wouldn't say I hate it. Have only been there three weeks, but I hate the feeling that it's creeping up on me on the weekends and I can't establish any firm boundaries. I'm not averse to working hard and doing a good job--but are there any jobs that truly don't creep into your weekends? No emails, no planning, etc.?

Yes, there are many, and at a certain point you have to establish the boundaries yourself. My job does not generally have any expectation of me working outside of 9-5 other than occasional weekday 5PM meetings due to timezone differences or scheduled IT service. Yet, some of my coworkers send emails at 11PM or work on projects on the weekends in what I can only assume is some weird Protestant work ethic "grindset" thing to try and prove themselves, OR they're not getting their sht done during normal hours (very likely). I've never worked on a weekend and if they ever ask me to, the answer will be, "Sorry, but I have plans with my wife and young daughter. I will be spending the weekend with my family. If you need anything from me I will be sure to get to it first thing Monday morning."
The only thing that helped with Sunday blues for me was getting a different job.
Learn to enjoy your work. If you look at Mondays as a new chance at obtaining work goals it isn't a bad day.
If you live your life dreading going to work everyday you'll have a terrible life that just isn't worth living.
A run, some football, and a standing card game with friends. Enjoy the simple things.
