Double workouts aren’t for beginners first of all. It requires a lot of durability, experience and being able to listen to your body.
Its hard to give such general advice without knowing training background but I’ve had success with double threshold doing similar workouts in the am and pm that are about 70% the volume of a single session. (If I would normally do 12x1k I like to do two sessions of 8x1k)
other double threshold sessions I mix and match are 5xmi, 2x2mi, 10x800, 6x1200, etc
The other way I like is a light tempo as you suggested and then 200s-300s in the afternoon. Again these are tough and build a lot of fatigue so make sure you are recovering well of them and running VERY slowly the day following a double workout
As a beginner I would not do double workouts. I have had workouts inturrupted once or twice and had to leave the track and finish the workout an hour or two later.
I run twice a day fairly often, but one or both sesions is easy miles. I am relatively injury-prone and not had any issues from running twice a day.
