I want to stay fast for the 800m and do some track meets, but those are tough to find and further away. If I wanted to do a 5k road race all out some weekends, would that help and be a good workout or hurt me at all in the 800m or mile speed?

If you're not specifically altering your training for the 5k then it shouldn't hurt your speed.

Ok, sounds good, yea it's tough to find 800m races for track meets, so I want to try to race as well locally
I would also like know this. From what I've heard it could be a good thing, especially before and after the main competition phase.
I also train mainly for the 800m, but have raced plenty of races around 5k (I prefer XC-races or trail runs over road races though). Right now I'm focusing on running three quality sessions a week (+strides and such). Typically a workout consisting of 200s at 800m pace, a hill session and a workout with longer intervals with short rest (like 7 x 1000 1 min rest or 8 x 800m 1 min rest for example). I will probably run 5k races as fast 'tempo runs' instead of the longer intervals soon. Maybe the longer intervals would be better but I'm from a distance background so I'm not afraid to get a little tired from longer races and I also enjoy running these races by other reasons (for example: drive to these events with other members from my club and talk about running, see new places etc.)
