I do so myself, but if you're talking about the lead pack, I have to think it's for show. Look at who does it:
European Americans.
Benoit in LA.
Rupp in Rio and Tokyo.
In Rupp's case, it seems to be so we talk about him when he throws one away every aid station.

They're just old fashioned. Back in the late 19th century, no self respecting gentleman or lady would be seen outside without a hat. Good on them for wearing a tasteful hat.
Watching the Tokyo 2020/2021 marathon olympics, so many athletes were playing around with their hats, including Galen Rupp, trying to keep cool with ice and water, and Kipchoge just run along without bothering with a hat.
And why are visors a no-no in running, but loved in tri?
I enjoy my visor on especially hot sunny days.
Not marathon distance though , regular runs.
