What is the best way to go about recording a repeat session that’s not on the track? I’m going to Denmark to see my cousins, and will be measuring off my repeat distances on the road/trail.

I wouldn't do track mode as that's not what it was designed for.
The way I see it you have two main choices - create a workout with reps of a certain distance or create a workout with reps based on time. If it were me, I'd just create a workout based on time (e.g. 6 * 3 minutes, with 2 minutes recovery)and run by perceived effort. For shorter intervals, I'm not a big fan of programming the distance because I think there's too much potential for error (e.g. .09 vs. .11).
What do you mean where do you retrieve the data? Do you mean how do you see the results of your workout?
