It depends school to school. My long runs are typically Saturday and then I either do an easy 3-6 mile jog, cross train, or take Sunday off. Nothing is required of me on Sunday.
There may be an NCAA regulation for practicing on sundays but I’m not 100% sure.
Most teams do and they are mandatory. Pick a religious college if you don't like it.
Some top programs do their long runs on Saturday like BYU and NAU I believe. If it’s an issue be sure to ask on a recruiting visit.
Sunday is a good day for most because theres consistently no race or classes to interfere. So there’s lots of time to drive to a trail and run long.
The thing is if you’re religious there’s lots of campus ministries that meet during the week so you can check off your “church box” if need be. Having you to attend only a Sunday service is more akin to a pagan ritual.

The NCAA requires that every college give athletes one day off per week, with no practice or formal team meetings. Some schools pick Sunday as their day off. I believe Furman XC always make Sunday their day off/run on your own day. When our son was being recruited we asked this question and identified schools that respected his religious faith and desire to attend church on Sunday. I know BYU and Notre Dame (2 of the top 5 NCAA men’s programs) are committed to supporting the faith and families of their athletes, including attending church on Sunday’s. I’m sure their are many other schools as well.
In the NCAA coaches are required to give each t&f/xc athlete a day off, each week: no required activities. (The day the person gets can vary from week to week.)
It is true that many programs have their xc runners do a long run on Sunday morning, but it's hardly universal. In some programs that's the weekly day off, so whether the runner does it is optional. In some cases there might be considerable peer pressure to run it, however.
In other programs the weekly long run is so important that a different day will be (officially) off, perhaps the day before a meet, and attendance at the long run will be required, whether it be on Sunday, Saturday, or another day.
Teams are certainly allowed to have Sunday practices; they just have to designate a different day of the week as the "off" day for a given individual. And as for church: You can get your 15-20 miles in and still make a 9:00 service. (That definitely provides an incentive not to party on Saturday night.) Or you can get the run in afterward, if the practice structure lets you pick the time you'll do it.

Another thing is I think the NCAA rule is that there needs to be one non mandatory day a week. But it doesn’t have to be Sunday. A program could make Monday a non mandatory practice. So Sunday can certainly mandatory. Actually since Monday’s are such a busy day with classes it makes much sense to do so.

My team's races were always on saturdays, so on a race week the LR would be recommended on sunday or monday. When we weren't racing, the LR would be Saturday morning and they were not optional - which meant you were going to get chewed out, miss races or eventually get kicked off if you didn't show up.
If you're worried about God being annoyed at you because you missed a Sunday church service, let me set you straight: it's a total non-issue.
Jesus Christ. If your team practices on Sunday mornings, you'll find a church that has a Saturday or Sunday evening service. Or you'll go at 11 am. This is not difficult to figure out. If this doesn't seem like it will work for you, just go to Liberty.

When I was in college we were presumed to be grown men. We were never told what to run on Sunday, we just did. It was also understood that we would run in the mornings.
