ok, according to this a 2:25 800 is equivalent to a 17:45 5k. Is that correct? It seems easier to run a 2:25 800 than a 17:45 5k. Any thoughts?

I don’t know how I feel about the jack daniels calculator as a whole.
Most people are gonna have an easier time running a 2:25 than a mid 17
Most people are aerobically deficient and find it easier to hit the shorter distances. After they train for a while most people's times line up pretty well with their best distances being a couple points higher then the other ones.

Go hang out with some 50 year olds who have been running for like 35 years who can run a mid 17(5:40 pace) and ask them how they feel about running a 2:25. Then go hang out with some 15 year olds who are running 15mpw who can run a 225 and ask them what they think about a mid 17.

Seriously, trying to translate the aerobic power of a 5k down into the increasingly anaerobic short mid-distance like 800m is a crapshoot. The JDC does not even include the 800m as a standard distance in its equivalency table.

I was fascinated how well the calculators (JDC or McMillan) worked when, several years ago, I extended my aerobic power out to and beyond the Half-Marathon. My 5k lined up very well with the Half. However, when that finally occurred, I didn't continue training at the time to try and specifically sharpen the 5k.

Look at Sara Hall's alignment, for example:

when I was in HS I ran the following:
800 - 2:10
1600 - 5:20
3200 - 10:50
Is it safe to say the 800 m was my best distance?

Yes I should have clarified, as an 800 runner that bleeds out to 400 and 1500, it doesn’t quite work for me, I’ve found my 800m and 5k just don’t really correspond.
