I have PRs of 2:05 for the 800 and 4:57 for the 1600. Considering those times, would I be able to run a 16-16:30 minute 5k for cross country?

No. Conversion from 800 to 1600 is really poor. I would guess closer to 17:50-18:20 depending on the course.
It is 100% possible for him to hit mid 16s. He probably just needs more 5k specific workouts. He could be new to the sport, explaining the drop off from 800 to 1600. I used to have the same thing, but am getting better.
By next fall you could shoot for 16:00-16:30
Get your mile time down now though, 2:05 can get you 4:35 and you could try to go for sub 16 off that
What do u mean by 5k specific workouts? Like upping my weekly mileage, or by doing speed workouts?

This is so wrong I know a lot of 1:57 guys who struggle very hard with 4:30 flat some people just have more speed

He means longer reps shorter rest kind of stuff such as 5x1k off 60 seconds or 2x2k + 4x1k off 90 and then stuff like 6k threshold runs or tempo runs just anything that gets you use to running that pace or similar for an extended period of time
its possible, considering you have 6 months. However with proper training I think you could get around 16:45 going off your mile.
