That’s a lot of rest to determine a mile time.
A shorter race at twice the race distance would be run at about race pace.
I think your mile time will be slower than the average pace of that workout.

If 1x 800 predicts 1600, so should 4x 800, regardless of rest duration.
Say for example a runner run an 800m w hard to very hard effort every fifth day w/ 4 days light running 4miles per day between each effort...
times are 148, 148, 147,148 w/ ~24 h rest between each.
Can you not predict a 1600m time?
