How should I run an 800m to the best of my ability, hopefully under 2 minutes? Currently I can run a 2:05.

Go out fast.
57 or 58.
Keep going out fast and training hard until your second lap gets fast enough to get your time under 2:00.

Your 3200 sucks compared to the 16 and the 16 is bad compared to the 800. I'm gonna assume you have adequate footspeed (sub 55) you need strength. Work on lactate threshold and do more mileage, also getting in the weight room wouldn't hurt. Don't worry about specific 800m work in the winter yet.
Positive split by two seconds works for every 800 rubber.

Agree about the weight lifting....I was 175 lbs and during racing season all the intense intervals would drop my weight by about 5 lbs, but almost all muscle.
Eat plenty of protein and build muscle.
Agree that your 400m time would be important to know.
Your 1600m, 3200m, and 5k times are about the same as the 800m.
Core work is important.
Also, at least twice a week have high intensity workouts, whether it's
strong accelerations as part of a 4-7 mile run,
or its 3-5 x 400m with 400m jog,
or its 3 x 600m (med, fast, slow) with 3 min jog between.
At least once a week, run 4-6 x 200m at 80% effort with 200m jog recovery. Jog 3 miles cool down. Try to run with good sprinter form (powerful long strides), which are most valuable in 800m.
Basics of weekly workouts: 2 hard days, 2 med days, 2 easy days (longer runs), 1 day very easy or rest.
The closer you get to 2 minutes, the more the other times will come down.
Some people advocate distance build-up...my teammate was an elite 2-miler, and around 9 flat for junior and senior year (senior year he had to recover from mono or would have run around 8:55). He could only run about 1:58 for half mile, so I think the 400m speed is important to a fast 800m.
need to train that speed endurance and get comfortable opening in a 57-58 where you dont feel like you are straining coming through
a 2:05 is still a ways off going 1:59 but some quick suggestons:
i felt so much better after picking up weight training for this distance
frequent strides
then just general speed endurance training
