Nick Diaz does triathlon fairly regularly still, so I'd go with him. He does XTerra races these days though, so it would be hard to quantify how quick he might be in a road 5k.
I ran a small 5k in SWFL 2014, and Clay Guida ran in it. Looked up the result, he was 19:30. Nice guy, got a picture with him after.
The Diaz brothers are not good at triathlons. Neither would break 20 minutes in a 5k is my guess. They aren't small. The fastest over 5k would be a 125 or 135 pounder.

Kron Gracie does a lot of supplementary triathalon training too.
Urijah Faber has claimed a 5:09 mile pb - not sure if it was from his High School or college days.
These guys are (mostly) tremendously fit aerobically, but apart from the fact that even the little guys are 15-20 lbs heavier than their official fight weights, getting your legs beat up every day in the gym probably does impinge a little on a 5K performance. And nearly all MMA fighters develop at least injury niggles in their knees and legs even by the time they are professionals.
These are pretty slow times for professional athletes. Gaethje has a heartbeat in the low 30s and if I ran 16 minutes in my teens with 10 beats/minute higher, many of these guys are likely quick at distance running

That’s pretty awesome. Clays been in the UFC for a long time.
I read awhile back Tony Ferguson would run around six miles a day and do intense hill repeats that would blow everyone else out of the water.
Michael Bisping would have to be up there. Probably sub 1:45 800m potential.
Max Holloway has a good runner physique and plenty of endurance.
